Berry Crumb Cake
Cake
1 1/2 cups all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar
1 egg
1/4 cup vegetable oil
1/2 tsp vanilla
3/4 cup milk
1/8 tsp almond extract
1/8 tsp lemon extract
1 Bag of frozen mixed berries
Crumb:
1/3 cup light brown sugar
1/3 cup granulated sugar
1/8 teaspoon salt
1/2 cup (1 stick or 4 ounces) butter, melted
1 3/4 cups all-purpose flour
Crumbs
In a large bowl, whisk sugars, salt and flour together. Then, add the melted butter and mix with a spatula. It will look and feel like a solid dough.
Berries
To prepare the berries it will need to be defrosted then set them aside for 10 mins. After that pour out all liquid that the berries produce. Then add a teaspoon of flour and some sugar.
Cake
In a seperate bowl stir together the egg, vanilla, lemon extract, almond extract and milk. Using a mixer fitted with paddle attachment, mix together flour, sugar, baking powder and salt.
Pour batter into a buttered pan then spoon berry mixure over batter. Then using your fingers, break topping mixture into big crumbs on top.
350f for 40 minutes then 335f for 15 minutes
