Beignets


Delicious pillow like desserts that you will fall in love with.

Beignet Dough

1 1/2 tsp dry active yeast

1/4 cup yeast

1/2 tsp sugar

1/2 cup evaporated milk

1 large egg

1/2 tsp salt

2 Tbls sugar

1/2 cup hot water

2 Tbls shortening

3 1/2 cups all purpose flour

Frying oil 370f

Combine dry active yeast with warm water and 1/2 teaspoon sugar. Let stand for 10 minutes. Then add evaporated milk, eggs, salt, 2 tablespoons sugar into the yeast mixture.

In a seperate bowl mix the hot water and shortening. Let stand until the shortening has softened. Now add this into the yeast mixture. Then incorperate the flour and mix until it becomes a workable dough.

Knead dough until it bounce back when you touch it. this will take about 5 to 7 minutes.

Put the dough into a bowl and wrap it in plastic wrap. Refrigerate over night or until it doubles in size.

Then roll out to 1/4'' thickness and cut into squares. Then fry them until both sides are golden. Place on paper towls to drain the oil. Then dust with powdered sugar.
