Snickerdoodles

If you love cinnamon you are going to love these cinnamon sugar cookies.

2 3/4 cups all-purpose flour

1/2 teaspoons cream of tartar

1 teaspoon baking soda

1/4 teaspoon salt

2 sticks unsalted butter

1 1/2 cups sugar plus more 1/4 for later

2 tablespoons ground cinnamon

2 eggs

Preheat the oven to 400°.

Sift together flour, baking soda, cream of tartar and salt then set aside. In a seperate bowl combine butter and 1 1/2 cups sugar. Beat on medium speed until light and fluffy. Add eggs and beat to combine. Dont forget to scrape down the sides of the bowl.

Add dry ingredients little by little to avoid getting flour every where. Now you can chill your dough. I usually put it the freezer for 15 minutes or until firm.

While the dough is chilling in a small bowl, combine 1/4 cup sugar and ground cinnamon. Use a small ice-cream scooper to form balls of the dough and roll in the cinnamon sugar. Place them about two inches apart on the prepared baking sheets. Bake for about 10 min.

I suggest cooling them on a wire rack.
